My friends can be very unique, and the food that they like to make is sometimes a little unique, too. One of my friends, Paul, is a senior at UMBC, and he has had his fair share of college student dining. He has had many meals at the commons and he has eaten frequently at the dining hall. While he appreciates the wide variety of food that our campus offers, Paul can get bored of the typically delicious campus food. He likes to make his own creations.
Paul has entitled his creation Fiesta of Chips. This is how you make it: put a bunch of chip crumbs in a bowl, and then top the chip crumbs with any ratio of mayonnaise, old bay seasoning, and parmesan cheese. He insists that the best way to eat this dish is with a spoon. A mutual friend told me, “it is very similar to eating cereal.” Paul remembers when he first attempted the dish in high school, and how he used Cheetos. Any chips will do, but according to Paul, Doritos work the best. The Fiesta of Chips is not only a very interesting way to entertain your friends, but it is a great way not to waste all those crumbs in the bottom of a chips bag!

Watching Paul cook is very reminiscent of the days when I was a kid. I would gather all the flowers and bark I could find, turn it into a "meal," and then insist that my mom try some of it. Paul’s cooking is fun in that way.

Sounds like substituting sour cream or plain yogurt for the mayo could work too.
